
My food cravings swing between two extremes: the very familiar, and the utterly new. Between food my great-grandmother would have made, and food I've never experienced before. Between tradition and innovation. Much as I love tradition, this post is about innovation. Innovation in the kitchen means conceiving and successfully executing a new combination of foods or flavors, or a new cooking technique, producing a dish or meal that’s nourishing, well-balanced, and delicious. What best inspires it? You might think, “Hunger!” Well, no, not really—true hunger loves the sorriest food.
