My New Pans

In my long quest for the perfect cookware, I’ve discovered there’s no such thing. There are many good, even excellent, lines of pots and pans at many different prices, and each has its pros and cons. In this post, I simply wanted to explain why I love the new pans I just bought, to put them in context, so to speak…but I soon found that to do so means taking you "down the rabbit hole" into the rather confusing world of modern cookware. I’m not aiming to produce a thoroughly researched consumer report, but merely to show how something simple—a pan to cook your dinner in—can become exceedingly complicated, and how, in such cases, it’s often best to take the whole issue back to the simplest level.
